The burger and its origins

The story of the burger goes back centuries.

As early as the 4th century, the Roman cookbook Apicius described a dish called Isicia, consisting of minced meat mixed with spices and other ingredients — an early example of combining ground meat with seasoning to create a flavorful dish.

Later, in the 12th and 13th centuries, the armies of Genghis Khan consumed minced meat dishes prepared from various types of meat. The meat was sometimes tenderized while carried under the riders’ saddles during long journeys — a practical solution that likely influenced later preparations similar to steak tartare.

The concept of finely chopped or minced meat as a convenient and nutritious food spread through trade routes and travelers such as Marco Polo, who helped introduce Eastern culinary ideas to Europe.

Over the following centuries, many variations of bread served with meat appeared across Europe and North America.

In the late 19th century, Louis Lassen, a Danish immigrant in the United States, is often credited with serving one of the first burgers as we know it today — placing a cooked beef patty between slices of bread to create a practical and satisfying meal.

From that moment, the burger evolved into a global culinary icon.

Originally, the meat used for burgers often came from carefully trimmed cuts of beef, emphasizing quality and flavor. Classic ingredients such as lettuce and tomato soon became staples, while modern burger creations now offer endless possibilities.

During the early 20th century, as demand for beef grew and economic pressures increased, the hamburger became a popular and affordable alternative, spreading rapidly across the United States and eventually around the world.

Today, the burger continues to evolve — from fast food to gourmet cuisine.
